Flavonoids are organic chemical compounds from the group of polyphenols found in plants. They act as dyes, protect plants against excessive UV radiation, against the influence of fungi, molds, bacteria and viruses and control the growth of plant tissues and the chemical reactions that occur in them.

Unknown citrus power

Vitamin P was first isolated in 1936 by Hungarian scientist Albert Szent-Gyorgyi. The same scientist isolated vitamin C from oranges in 1928 and later determined that flavonoids in citrus fruits enhance its effects. Thanks to many studies on these compounds spanning several decades, it has been established that citrus flavonoids have a number of other valuable properties.

Their highest concentration is found in the peel and white inner membrane of citrus fruits. Although these compounds have a bitter taste, it is worth eating the citrus pulp with the membrane and, after proper seasoning, use the peels as an addition to cakes and desserts.
