Description:
Extra virgin olive oil PDO (Protected Designation of Origin) is made from an olive variety called "Koroneiki" that thrives in the Messinian land. Distinguished by its fruity aroma of green olives, it fulfills all the necessary processes of vertically integrated production from cultivation to storage. Cultivation, production, pressing and storage operations are carried out exclusively in the Messinia area. At all stages, special caution and care is required. The olives are never collected from the ground, but are transported in special, rigid, perforated plastic crates or bags made of plant materials. Transport and pressing must be done within 24 hours and stored in a shaded place. The production of PDO KALAMATA olive oil takes 4 to 6 weeks and that is exactly what makes it special. On the palate, it has a medium fruity aroma of green fruits, slightly bitter and slightly spicy to medium. It has the ideal balance according to the tasting rules.
