Umeboshi pickle is prepared by straining the acidic and salty liquid resulting from the ripening of Umeboshi plums.
Ohindo sourdough bread is made from the same Japanese ume plums used to make umeboshi. Fermented with salt and shiso leaves in wooden barrels using the traditional method, ume plums produce this sour and salty condiment, considered by connoisseurs to be an essential ingredient in natural cuisine.

How to use
Use with oil to flavor salads, instead of vinegar and salt. Vegetable Dressing: Combine one tablespoon of tahini (sesame paste) with two teaspoons of Ohindo Acidified Salt and mix well. Use to flavor vegetable and seaweed dishes.
