Properties:
- While refined white sugar can be derived from sugar cane or sugar beet, turbinado comes exclusively from the first pressing of sugar cane;
- The cane juice is then boiled only once; (as opposed to refined granulated sugar, which is boiled several times to rid it of any residual molasses and, with it, any brown color);
- The boiling process causes the sugars to crystallize and those crystals are then spun in a centrifuge – or turbine, if you will – to remove excess moisture;
- The result is turbinado sugar.
Way of ussage:
It can be used to sweeten cakes, teas, coffees, etc.
